Run Rum Run started with a simple, stubborn question: why is great Australian craft rum so hard to find? We looked around and decided someone had to do something about it.

So we did. Distilled in the shadow of the Grampians in Western Victoria, using water drawn from those same ranges. Column still spirit, aged patiently in ex-bourbon and ex-Pedro Ximénez casks. No shortcuts.

Why Victorian rum?

Australia has a proud spirits tradition, but craft rum has lagged behind whisky and gin in the public consciousness. We think that's about to change, and we intend to be part of that change. Victoria's climate, culture, and craft community make it an ideal home for a rum producer with genuine ambitions.

The approach

We start with a column still base spirit: clean, precise, a blank canvas that lets the cask do the talking. Ex-bourbon barrels lend vanilla and caramel warmth; ex-Pedro Ximénez sherry casks add dried fruit complexity and a long, gently sweet finish. Then we get out of the way and let it rest.

The range

We're building four expressions: Pure, Dark, Overproof, and Spiced. Each one is a different conversation about what rum can be. The Pure is our foundation: honest and unadorned. Dark leans into ex-PX sherry cask richness, Overproof turns up the intensity for people who don't need it softened, and Spiced brings warmth without shortcuts. We're taking our time to get each one right.

Small batch, always

We have no interest in scaling to the point where quality becomes someone else's problem. Small batch means we touch every step of the process. It means we can taste, adjust, and refuse to bottle anything we're not proud of. That's not a limitation. It's the whole point.

How it's made.

Process

Dunder recycled

Around 20% of each fermentation is dunder: spent wash recycled back in to build depth, funk, and complexity the natural way.

Maturation

Ex-Bourbon + Ex-PX

American oak for vanilla and caramel warmth; Pedro Ximénez sherry casks for dried fruit, dark raisin, and a long sweet finish.

Molasses sourced from Queensland's sugar industry, fermented and distilled here in Victoria.
